In February of this year, the United States saw an epic milestone in the world of food safety.  After a thorough investigation following the 2008-2009 Salmonella Typhimurium outbreak, a 76-count felony indictment was handed down on the Peanut Corporation of America’s executives.  This indictment marked the first major criminal case involving the food industry, as most food cases historically have been addressed in civil courts.....more

Spotlight on Public Health: Hepatitis A

Hepatitis A is a virus that can be transmitted through contaminated food, water, and surfaces, and through person-to-person contact.  Even though Hepatitis A cannot grow outside of a host cell, it is a very hardy pathogen that can remain stable even under stressed conditions.  Studies have shown that the virus can remain infectious on surfaces for up to 30 days, and withstand extreme temperatures such as freezing, dry heat up to 190F for a minute and a half, and boiling water for three minutes.....more
