Spotlight on Public Health: Listeria monocytogenes

Listeria can be a particularly challenging food borne pathogen because it can survive freezing and drying and it is relatively heat stable. It also grows fairly well at refrigeration temperatures, which is why date labeling of ready-to-eat items and disposing of them in the correct time frame is so important.
